Weight Watchers Pasta Primavera with Provolone
This was so yummy, and I hope you guys like it as much as I did!!
Makes 4 servings
1 teaspoon olive oil
2 onions, finely chopped
1 garlic clove, minced
1 green or red bell pepper, seeded and diced
1 medium zucchini, diced
1 cup coarsely chopped plum tomatoes
1/2 cup low-sodium chicken broth
1/4 teaspoon salt
2 tablespoons finely chopped fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon crushed red pepper
3 cups hot cooked penne
1/3 cup shredded smoked provolone
1 tablespoon grated Parmesan cheese
1. In a large nonstick skillet over medium heat, heat the oil. Saute the onions, garlic, bell pepper, and zucchini until the onions are golden, about 5 minutes.
2. Stir in the tomatoes, broth, salt, parsley, oregano, and red pepper; bring to a boil. Reduce the heat and simmer until thickened, about 10 minutes. Pour over the penne, then stir in the provolone and Parmesan.
Now, we added chicken breast chunks to ours and it was really good. I am not exactly sure what it would bump the points value up to, because it just depends on how much chicken you want to use, but it was super yummy!!

MESS!!
Okay, so I think this just deserved it's own post...(if you haven't yet, read my next few blogs because I just posted them too!! I am on a marathon tonight...)
What a mess he is. He had himself cracking up because he was making it "wain". Gotta love it.
As I have said before, Chase loves to help clean and cook. When we do the dishes, he loves to help out with the little squirter faucet thing. Well, today after Sunday dinner dishes Chase still wasn't ready to be done, so Mom and I decided that it would be okay to let him play with the water squirter thing for a little while longer. We both knew we would probably end up cleaning up a mess...but not quite this big of a mess...

What a week!!
Wow, I, for some reason, found it really hard to find time to blog this past week, so bare with me as I post a whole weeks worth of Freeman/Haynie fun!! =)
Getting Chase to stand still, look at the camera, AND smile is quite a task when it come to taking pictures. He is such a MESS!!
He put this hat on all by himself...backwards and all. Almost every Sunday we go for a little evening walk. Last Sunday, we bundled up and headed out the door to a bridge off Riverside. It was a little chilly, but not too bad. We had a fun time getting out of the house and getting a little exercise.
Yes, he is a quarter black. Haha...gotta love those lips!
This picture made me laugh so hard. This is when he put his hat on all by himself. Love the curls! =)One hott couple!Happy family!Lexi's newest hairstyle...gotta love it!Chase has become quite the helper. He loves to help clean and cook...below are pictures of his most delicious meal yet. (chopped up romain lettuce in root beer! Yum!)Chef Chase."Mmm! Nummy Mommy-twy it!"Chase LOVES to jump on the trampoline. One day Chase and Nuna spent a good hour out on the trampoline playing. As I said earlier, Chase has become quite the little helper. For Christmas, Santa brought him a vacuum, and broom/mop cleaning set and I believe that has been his most favorite toy yet. He tried for a few minutes to "suck" up a starburst wrapper, and finally got so fed up with the fact that it actually wasn't being sucked in so, he finally resorted to shoving it into the bottom of his vacuum. And this wonderful picture is of Chase and his choo-choo train tattoo...that he drew all by himself...And today, I would say that my little man looked like quite the stud...enjoy the next few pictures!

Favorite Pictures from 2007
Okay, so I tried really really hard to narrow it down, and to be honest I had a very hard time. Also, I didn't even have all my pictures from this past year to go through! My computer is getting repaired and that is where the majority of my pictures are so, I just used the pictures from the last 6 months or so that are only on X's computer and I still had a hard time...I guess it's a good thing I didn't have ALL my pictures because you guys would be reading a 20 page, 300 picture post. ;)

Spider-Man!!
Okay, so Chase believes that if he shoots his "webs" at people, they will get tangled up and not be able to move.
This all started when Sam started playing a little game with him. He would have Chase shoot him with his "webs" and Sam would immediatly act like he was tangled up and fall to the floor, unable to move.
One day, X, Chase, and I headed to the mall. Usually when we go to the mall, we let Chase play on the playground thing for about 15-20 minutes. On this particular day, him and another little boy got into an argument over one of the toys. The little boy was around the same age as Chase. X and I looked over to see what Chase was doing and we see this little boy push Chase back and Chase immediately gets his hands up in web shooting position and starts to shoot his webs at this little boy. When the boy came back to push Chase, Chase had a completely dumbfounded look on his face, he was in shock that this little boy was not all tangled up by his webs he had been working so hard to shoot at him! X and I just giggled, then X went over and broke the fight up. Chase didn't get hurt and luckily he didn't hurt the other little boy!

Clubhouse fun!
A few weeks ago, X, Chase, and I bought the movie Ratatouille and built a clubhouse up in our room to watch it. Chase thought that having a clubhouse would be so so cool, and he had a blast in it. We enjoyed a bowl of ice cream while we watched our movie.
Chase completely enthralled by the TV-(imagine that!)
Enjoying their ice cream and the movie!
Yours truly. ;)
Chasey and Daddy...my two monsters.
And last, but not least , Chase and I fell asleep about 20 minutes into the movie...poor daddy stayed up and finished the movie by himself...haha.Sunday, January 6, 2008
New calling...
Today the Bishop called X and I to be the chairpersons of the activites committee in our ward! What a huge calling! I am super excited about it. I told the Bishop I love to plan parties and he said that that was great, just as long as there is no alcohol, smoking, or dipping he said! Our Bishop here is great, he is such an awesome man. He has a huge sense of humor.
What a MONSTER!
So, the other night I came downstairs to find Chase in my make-up. I left it out downstairs so I couldn't get too mad at him...He was such a mess and my mom and I couldn't help but to laugh. He told us, "I wook pwetty mommy." =) Gotta love those 2 year old boys! (even if they do destroy your brand new mascara!! The black stuff all over him is my mascara and he got my green concealer stick and was putting it on ALL over him! What a mess!!
Anybody know where Chase has been?
